Founded in 1655, Suzuki Shuzo's flagship brand, "Hideyoshi," is named after the praise given by the Akita lord, Satake, who referred to the sake as "excellent and good." The brewery’s history began when the first generation, Matsuemon Suzuki, moved from Ise to the present-day Nagano, Daisen City, Akita Prefecture, to start brewing sake. Blessed with the pure underground water from the Ou Mountains and high-quality rice, the brewery has carried on the tradition for over 360 years, with the motto of brewing sake that complements the local food culture. All rice is milled in-house, with careful attention given to the polishing ratio for each sake brand.
