Shiraki Tsunesuke Shoten was founded in Tenpō 6 (1835) during the Edo period—the same year that historical figures like Ryoma Sakamoto and the famous Atsuhime, featured in a Taiga drama, were born. Since then, the brewery has continued making sake in Gifu for generations. Their journey into aged sake (koshu) began in the 1960s. At that time, with inexpensive mass-produced sake from large companies entering the market, the sixth-generation head decided to take a different path and declared, “Let’s take on the challenge with aged sake.” However, making aged sake takes years—sometimes decades. It was an uncertain road, but through persistent trial and error over more than 50 years, they devoted themselves entirely to this craft, placing the company’s future on the line. Thanks to that unwavering dedication, their efforts paid off. Today, aged sake has become their flagship product, enjoyed not only in Japan but also by sake enthusiasts around the world.
