Coming straight from the saga of Saga prefecture, Iwanokura Junmaishu, is a Junmai sake of exceptional beauty. Polished at 65%, the Yamada Nishiki rice blossoms exuding delicate flavors. An acidity of 1.4 means it has a moderate brightness that contrasts beautifully with the soft rice undertones. Additionally, with a SMV of 3, expect a slight sweetness that lingers. In 1875, in Ogī, Saga Prefecture, northern Kyushu, the Shichida family was running a watermill, flour milling, and noodle-making business. When a nearby sake brewery closed down, they decided to enter the sake-making industry. Using high-quality sake rice grown in the Saga Plain and natural spring water from the Tenzan mountain range—also known for its fireflies—the brewery has been crafting sake with dedication. Their main brand, "Tenzan," is named after the mountain and has been in production since the brewery's founding. In 2001, the sixth-generation owner, Kensuke Shichida, launched a new brand, "Shichida," which celebrates its 20th anniversary this year.
