4.35Tasting Notes After 3 Days of Opening: This sake aims straight for the heart of the strike zone—classic and well-rounded. While it is honjozo and hiire, It has the rich, full-bodied feel of a Junmai Daiginjo and the freshness of a Nama-zake (unpasteurized sake). There’s depth and a bold character, with a solid structure that brings out a sweet, umami-packed flavor. Yet, no matter how many sips you take, it never feels heavy or tiring. The strong rice umami shines through beautifully. The balance is excellent, and I enjoyed it even more than on the first day of opening.
