Founded in 1872, Doi Shuzojo is located in Kakegawa City, Shizuoka, and has been dedicated to sake brewing ever since. They produce 'Kaiun,' a renowned sake that represents Shizuoka. While many modern sakes feature bold, sweet aromas that can be enjoyed independently, Doi Shuzojo takes a different approach. Shizuoka, surrounded by Mt. Fuji—the tallest mountain in Japan—and Suruga Bay—the deepest bay in Japan—is a treasure trove of delicious ingredients. To complement the variety of dishes made from these local ingredients, 'Kaiun' is crafted with a gentle aroma and a clean, transparent flavor. This results in a crisp, easy-to-pair sake that doesn’t overwhelm the meal and is enjoyable to drink over time.
