This sake is crafted using 100% Fukui-grown Gohyakumangoku polished down to 50%, the same level as a Daiginjo. It offers a clean, crisp dry profile with a refreshing finish. Despite the high polishing ratio, the brewery intentionally keeps the ginjo aroma subtle, staying true to its philosophy by not labeling it as a Daiginjo. Enjoy it chilled for a light, white-wine-like elegance, or warm it gently to bring out the soft, mellow richness of the rice.

Ito Brewery preserves its long-standing traditions while embracing flexible brewing methods to create sake that truly satisfies its customers. The brewery stands near Daian Zen Temple and the Kuzuryu River, where, in the Meiji and Taisho eras, its sake was once transported by riverboat to Mikuni Bay and then to cities like Kyoto and Niigata. As river transport declined with the development of modern infrastructure, the brewery shifted its focus fully to sake production, offering refined dry styles and crisp namachozo for major markets. In recent years, the owner himself has taken on the role of toji, crafting sake that directly reflects his philosophy. Through continuous experimentation—especially with Junmai Ginjo—the brewery has created both sharp and elegant expressions as well as rich and fruity styles. They have also begun small-batch brewing using locally grown Fukui rice to produce original Junmai sake. By drawing on Fukui’s natural climate, pure water, and high-quality rice, Ito Shuzo aims to deliver sake that brings out the full aroma and depth of umami, offering a truly satisfying experience to drinkers.
