This limited autumn release sake is crafted to highlight gentle umami and a broad, well-rounded flavor profile. It opens with refreshing aromas reminiscent of muscat grapes and apples, offering a surprisingly bright and elegant bouquet for a hiyaoroshi-style sake. On the palate, a smooth texture typical of aged sake unfolds into rich, mellow umami with a subtle fruitiness. Layers of clean acidity, a whisper of sansho-like spice, and lingering fruity notes create a deep and complex impression. It leaves a long, graceful finish and pairs beautifully with autumn flavors such as grilled sanma, mushrooms, or roasted chestnuts.

Ohmine Brewery Company

Yamaguchi

Founded in 1822, Omine Sake Brewery was revived in 2010 by Tsuyoshi Akiyama after being dormant for over 50 years since 1955. The brewery uses spring water from Beppu Benten Pond, believed to grant longevity, which is rich in calcium and minerals. This water enhances fermentation, resulting in a clean, pure sake with no unwanted flavors. Omine Sake Brewery is dedicated to producing only junmai genshu (pure rice sake without water added) and aims to create sake that reflects the local climate and land, combining traditional methods with modern techniques.
