Established in 1877, we, at Yamasan Shuzo, have been crafting delicious sake, known as "Yamasan Masamune," at the heart of Sakagami Shrine, where the deity of sake brewing is enshrined. Our brewing water comes from local springs, and we meticulously polish locally sourced rice from Okuizumo and Hyogo prefectures in-house. Our sake is expertly crafted by Izumo toji, who has inherited a long tradition. All our koji is handmade, and our brewery workers stay overnight for about six months, tending to the fermentation tanks even at night.
