Shimane

The Izumo region of Shimane Prefecture has a long history of sake brewing, with records dating back to the Nihon Shoki. Okuizumo, where our brewery is located, is a land of fertile soil and renowned natural springs, known as a prime rice-growing area within the Izumo region. It is also one of Shimane's key producers of sake brewing rice, supplying about 70% of the prefecture’s specialized sake rice. At our brewery, we use only locally grown rice from Okuizumo, polish it in-house, and craft our sake with the skill of young Izumo toji (master brewers).
