Yuki Brewery is a historic sake brewery located in Yuki City, Ibaraki Prefecture, with a legacy spanning over 400 years. The brewery uses pure, soft spring water from the Kinugawa River system for brewing, and carefully selects high-quality rice varieties from across Japan according to the style of sake being made. One of their signature practices is “kanzukuri,” or winter brewing, which takes advantage of the area's cold and dry climate to produce clean, refined sake. The brewery building itself, a traditional "misegura" storehouse constructed in the late Edo period, still stands today. Its iconic red brick chimney, built during the Meiji era, remains in use, symbolizing the brewery’s deep respect for tradition and craftsmanship.
