Sharing the same parentage as the renowned Yamada Nishiki, Hakutsurunishiki was created in 2003 to improve sake rice quality further. DNA studies show it retains the soft elegance of Yamada-ho while incorporating the structure of Tankan-Wataribune. "Jikon Hakutsurunishiki" beautifully showcases the unique qualities of this rice. With a perfect balance of aroma, flavor, and body, it offers a deeply moving and memorable sake experience.

Kiyashow Brewery was founded in 1818 in Nabari City, Mie Prefecture. It originally began brewing sake to meet the demands of local farmers and gradually expanded its reputation. Since its establishment, the brewery has aimed to provide high-quality sake rooted deeply in the local community. While preserving the traditions passed down through generations, the brewery has evolved under the leadership of new-generation brewers. Notably, since 2004, Tadayoshi Onishi has served as the head brewer, spearheading innovative efforts. Under his guidance, the flagship brand “Jikon” was born and has since gained nationwide acclaim. Today, Kiyashow Brewery combines both traditional handcrafting and modern machinery, focusing strongly on quality and hygiene in their sake production. In 2018, they revived their historic brand “Takasago,” embarking on new challenges. Their approach blends traditional brewing methods with the latest technology, including close collaboration with local farmers and careful selection of sake rice, all aimed at continuously producing superior sake. With Tadayoshi Onishi’s leadership, Kiyashow Brewery continues to embrace challenges and look forward to the future.
