Originally founded as Kato Shoten, the company began by selling mirin and shochu. After obtaining a liquor manufacturing license in 1899 (Meiji 32), it started producing sake under the brand name “Kuromatsu Hakusen” and changed its name to Hakusen Shuzo in 1951 (Showa 26). Today, the brewery also produces sake such as “Hanamikura,” shochu, and liqueurs, but its signature product is undoubtedly the mirin FukuRaijun Traditional Aged Hon Mirin, made using time-honored methods without any chemical seasonings or food additives. This mirin, made only from glutinous rice, rice koji, and rice shochu, is known for its brilliant amber color and rich aroma with a refined sweetness. When tasted, its clear, mellow sweetness gently spreads across the palate, enhancing the depth and flavor of any dish. While commonly used as a seasoning, it is also enjoyed as an aperitif or digestif. Its quality has earned praise from renowned chefs and sommeliers alike. Versatile in use, it complements a wide range of dishes—from Japanese and Western cuisine to desserts—and invites experimentation in every kitchen.
