This tiny sake brewery was founded in 2021 (Reiwa 3) after acquiring a new sake brewing license—an exceptional case, as such licenses are typically no longer issued in Japan, except for export purposes. Nestled by the serene waterside of a lagoon rich in nature, the brewery operates as a year-round producer (shiki-jōzō). Its founder, Yosuke Tanaka, previously served as the president of a long-established sake brewery. Driven by his belief that “more newcomers will make sake more exciting,” he seized the opportunity when export-only sake licenses became available and launched this new endeavor. In addition to sake for export, the brewery also holds a rare license to produce “other brewed liquors,” allowing them to craft diverse and experimental beverages such as doburoku (cloudy sake) and other unique expressions using creative ingredients and methods.
