“Tsuchi Sake Shizen Shu” Nojoho Junmai Ginjo is a rare and unique sake made from Nojoho rice — an heirloom variety once lost after the war and now revived. It has a medium body with soft aromas of strawberry and banana, layered with subtle nuttiness. On the palate, it gently balances all five traditional tastes: sweet, sour, spicy, bitter, and salty. Brewed with organically grown Nojoho rice, Meiri Ogawa yeast, and pure soft subterranean water, this sake reflects a deep harmony with the Earth. Food Pairings: Black edamame, tuna steak, oden, simmered miso mackerel.
