The fresh aroma, reminiscent of green apple and muscat, is pleasant. The mouthfeel is sophisticated. From there, a rich, mellow flavor spreads out in abundance. While the wine has a dense texture, it is tightened by Ohmine's clear acidity, making it indescribably easy to drink. A soft lingering aftertaste wafts softly as the wine is swallowed, and gradually fades away with a beautiful sharp finish. It is recommended to be served cold or warmed up to 45-50 degrees Celsius to accentuate its mild aroma and gentle sweetness, and to enjoy it as a soft, pleasantly warmed sake.

Founded in 1822, Omine Sake Brewery was revived in 2010 by Tsuyoshi Akiyama after being dormant for over 50 years since 1955. The brewery uses spring water from Beppu Benten Pond, believed to grant longevity, which is rich in calcium and minerals. This water enhances fermentation, resulting in a clean, pure sake with no unwanted flavors. Omine Sake Brewery is dedicated to producing only junmai genshu (pure rice sake without water added) and aims to create sake that reflects the local climate and land, combining traditional methods with modern techniques.
