Founded in 1629, Tsubosaka Brewery is a historic sake brewery with nearly 400 years of tradition. Its flagship label, Seppiko-san, is named after the nearby Mount Seppiko—one of Japan's three sacred Mt. Hikosan peaks—located in the mountainous region of Yumesaki in Himeji, Hyogo Prefecture. The brewery uses high-quality sake rice such as locally grown Yamada Nishiki and pristine spring water sourced from Mount Seppiko. Taking advantage of the area's large temperature fluctuations between day and night, the sake is brewed using traditional natural fermentation methods, resulting in a crisp and clean flavor with excellent clarity. With a small, dedicated team of brewers, Tsubosaka Brewery continues to craft sake that captures the spirit and terroir of the Banshu region.
