Yamaguchi

Choshu Brewery is a sake brewery "reborn" in Shimonoseki, Yamaguchi Prefecture in 2020. Choshu Sangyo, a company within the prefecture, took over the business from Kodama Sake Brewery, which was scheduled to close in 2018, in order to preserve the sake culture and traditions that continue in this region. A new brewery was built, and Miki Fujioka, who had trained at other breweries, was brought in as toji (master brewer) to begin sake brewing. Aiming to make sake that goes well with meals with a mild and refreshing aroma, soft sweetness and acidity like white grapes, and freshness reminiscent of citrus fruits.
