The brewery uses pure spring water for its brewing process and sources sake rice such as Akita Sake Komachi, Miyama Nishiki, Misato Nishiki, and Gin San, cultivated in collaboration with local farmers. In recent years, Dewatsuru has focused on crafting Junmai sake using the Akita-style kimoto method, allowing for slow fermentation at low temperatures. This results in a sake with a smooth and finely textured mouthfeel.
