Echizen Ono is a long-established brewery that has been located in Echizen Ono, a small Kyoto in the Hokuriku region since the middle of the Edo period (Horeki era). Echizen-Ono is located on the upper reaches of the Kuzuryu River and is a fan-shaped basin rich in water and greenery, surrounded on all sides by mountains of 1,000 m. It is also a specialty area for "Gohyakumangoku," rice suitable for sake brewing. It is a wonderful place. We are a small brewery that makes all of our sake by hand, without relying on machines, and we aim to create sake with a new taste while preserving traditional methods as a brewery specializing in high-grade sake with all products being ginjo standard.
