Tochigi

Tomikawa Shuzoten, founded in 1913 (Taisho 2), is a sake brewery located in Tochigi Prefecture. It sits along the Arakawa River, which is fed by one of Japan’s Top 100 Famous Waters—Shoninzawa spring—providing an excellent water source for brewing. Since its founding, the brewery has produced sake under the brand name Chuai. More recently, in response to changing tastes, they introduced the Tomikawa series, known for its rich aroma and deep umami flavor of rice. Centered around unpasteurized sake (namazake), the line uses premium sake rice such as Yamadanishiki, Miyamanishiki, and Gohyakumangoku to create a range of unique expressions. They’ve also continued to expand the Chuai brand, releasing several varieties under the Chuai Nakadori Series. In addition to the main sake rice, the brewery now uses varieties like Banshu Aiyama, Dewasansan, and Akaiwa Omachi to further enhance their lineup. Staying true to traditional ginjo-style brewing, all of their sake is handcrafted with great care by experienced brewers.
