The founder of Koyama Honke, Matabee Koyamaya, originally came from Banshu and learned sake brewing in Nada before starting his brewery in Saitama. Over time, Koyama Honke began producing more affordable sake. Still, the founder's desire to craft high-quality sake in Nada, where he had first learned the craft, led to the acquisition of Hamafukutsuru. At Hamafukutsuru’s Ginjo Workshop, you can observe the entire traditional brewing process, where they focus exclusively on premium sake with an average polishing rate of 51%.​​​​​
