This long-established sake brewery was founded in 1532 in the Omi region—two years before the birth of Oda Nobunaga. It is considered one of the four or five oldest sake breweries in Japan. The brewery uses sake rice grown with organic fertilizers and reduced pesticide methods. Varieties such as Tamasakae, certified as an environmentally friendly agricultural product by Shiga Prefecture, and Yamada Nishiki cultivated locally in Maibara, are used to craft safe and reliable sake with care and dedication.
