Founded in 1711, our brewery is dedicated to protecting Japan's rice fields. We cultivate our rice using natural farming methods and are committed to producing 100% natural rice, 100% junmai sake, and 100% naturally sourced yeast starters. In addition to producing sake, we also produce fermented rice products. Aiming to become a self-sustaining brewery, we do not use any processing aids, even those not required to be listed. Using cedar from our mountains, we craft wooden barrels and rely on naturally cultivated rice and spring water. With the help of microorganisms native to our brewery in Tamura Town, we create sake that can only be made here.
