Founded in Genroku 15 (1702), this brewery has been passing down its craftsmanship for over 300 years, producing the exquisite sake brands “Shiroku” and “Kozaemon” from the beautiful land of Mizuho. While preserving traditional brewing methods, they actively incorporate new techniques to create “light yet flavorful” sake that pairs perfectly with meals. They use groundwater filtered through the local Byobuyama mountain as their brewing water. This water, flowing through ancient seabed layers, is characterized by its soft texture and rich mineral content.
