Shiratake Brewery's history began in 1919 when founder Tatsuji Kawachi acquired brewing rights from Mr. Takahashi, a sake brewer in Tsushima. At that time, several breweries on the island produced sake and shochu, but today, Shiratake stands as Tsushima's sole remaining sake brewery, supplying most of the island's sake needs. Initially, the brewery invited master brewers from Ikitsuki Island in Hirado and Ojika Island in the Goto archipelago, embracing the unique brewing traditions of these remote islands. Today, local brewers from Tsushima have inherited and continue these time-honored techniques.
