This Junmai Ginjo sake is brewed with “Saku-1,” a yeast strain discovered from cosmos flowers in Saku through a collaboration between the local sake brewers' youth association and Tokyo University of Agriculture. As a wild yeast strain, it brings a gentle and distinctive character to the sake. Unlike many modern Ginjo sakes, it has very subtle aroma, with a calm, mineral-like flavor. Its refreshing acidity is well-balanced, making it an ideal companion for food—enhancing the meal while offering a smooth and pleasant drinking experience.
