Kimura Shuzo, founded in 1615 (the first year of the Genna era), is one of the most historic sake breweries in Akita Prefecture. Since its establishment by making use of the natural blessings unique to this region, the brewery has grown alongside the times—through the stabilization of rice cultivation, the prosperity of local silver mines, and the development brought by the opening of the railway. For over 400 years, Kimura Shuzo has remained deeply rooted in the local community, sincerely committed to sake brewing that reflects the character of the land. The traditional techniques handed down through generations have been further refined by toji (master brewers) and kurabito (brewery workers) who continuously hone their skills in renowned brewing regions across Japan.
