Senju Brewery, founded in 1902 in Iwata City, Shizuoka Prefecture, has a history of over 100 years. Located between the Ota and Tenryu Rivers, the area is blessed with high-quality water—an essential element of sake brewing. Skilled Echigo toji (master brewers) have long crafted sake here with great care. The underground spring water drawn from a well on the property, sourced from the Tenryu River, is known for its clear, crisp taste. Since 1946, the brewery has focused on brewing ginjo sake using highly polished rice, maintaining a commitment to quality without compromise. Today, technically trained brewers continue this tradition while also introducing modern improvements. In recent years, a dedicated ginjo facility was built to enable long, low-temperature fermentation and storage under strict climate control.
