Yachiya Shuzo, based in Kanazawa, Ishikawa Prefecture, produces its flagship sake, Kagatsuru. The name combines "Kaga" (the historic region) and "Tsuru" (crane, a symbol of good fortune). Founded in 1628, Yachiya Brewery boasts nearly 400 years of history, and its brewery is designated as a Registered Tangible Cultural Property by Japan’s Agency for Cultural Affairs. Using high-quality sake rice, including locally contracted Gohyakumangoku and Yamada Nishiki from Hyogo Prefecture, Kagatsuru reflects the rich brewing heritage of the region.
