Founded in 1625 (Kanei 2), this brewery has been producing sake in the same location for 350 years. The current owner is the 12th-generation successor, dedicated to preserving the tradition of "Nara Sake." While the brewery previously focused on producing economical sake, it has since shifted its direction. Under the brand Shin'in, it now crafts small batches of Junmai Ginjo and Junmai sake, both unpasteurized (nama genshu) and pasteurized varieties, with this year's production limited to just 30 koku. Drawing on experience as a shochu tōji (master brewer), the brewery is also taking on new challenges, such as aging sake in oak barrels.
