Hiyama Brewery is known for its sake brands "Kōki" and "Senhime." In addition to brewing sake, the brewery also cultivates its own special variety of grapes in its private vineyard, producing wine under the "Hitachi Wine" brand. The brewery has expanded its wine offerings to seven different types, including wine made from locally grown "Kyoho" grapes in Hitachi Ōta City. For sake brewing, they use the spring water from the nearby Satogawa River. In addition to sake varieties like Daiginjo, Junmai Shizen-shu, and Honjozo, the brewery also produces premium shochu, such as "Senhime" and "Hitachihime," offering a wide range of alcoholic beverages.
