Ikeshima Brewery was originally founded in 1907 (Meiji 40). It began when Echigo Toji (master brewer) Sennosuke Ikeshima fell in love with the pure underground water from the Hokigawa River and purchased a local brewery to start his sake-making journey. Although production later ceased for some time, in March 2021, sake wholesaler and retailer Kobayashi Saketen took over the business. This marked the revival of sake brewing in Kanuma City for the first time in 34 years. The beloved brand “Ikenishiki,” once produced by Ikeshima Brewery, has also been revived. Using the same traditional brewing methods as before, the sake is once again being enjoyed by locals in northern Tochigi Prefecture, with hopes of becoming a long-loved local brand once more.
