Founded in 1868, Komatsu Brewery began as a sake producer dedicated exclusively to crafting premium Japanese sake. The brewery is located in Usa City, Oita Prefecture, in northern Kyushu—an area blessed with ideal conditions for sake brewing: pure water, high-quality rice from the Usa Plains, and cool winter winds. Although production was temporarily halted in 1988, the brewery was revived twenty years later in 2008, when the sixth-generation owner returned home and launched the “Hojun” brand. Their goal is to create sake that pairs beautifully not only with Japanese cuisine but also with modern international dishes. Run by a close-knit family, the brewery strives to make sake that acts as the “perfect supporting role” to food—enhancing flavors rather than overpowering them. Designed to complement richly flavored and oily dishes such as sashimi, vinegared foods, fried items, and meat dishes, Hojun’s sake makes familiar meals taste remarkably better. Each year, they continue refining their craft in pursuit of the ideal sake experience.
