In a region known for its beautiful rural landscapes and abundant nature, often called the "Village of Water," Ishikoshi Brewery produces the esteemed sake "Sawanoizumi." The brewery has an annual production of approximately 288,000 liters (1,600 koku), with about 80% of its distribution within the prefecture, enjoying particularly strong local support. Given the area's long history of rice cultivation, the brewery emphasizes the quality of its rice, using locally grown, environmentally friendly rice. Around 15 years ago, they established the "Sake Rice Research Association" with local contract farmers to promote the production of sake rice varieties such as "Yamada Nishiki," "Kura no Hana," and "Kame no O." Since its founding in 1920, the brewery has adhered to the traditional sake-making techniques of the Nanbu Toji (master brewers). However, over the past 20 years, they have progressively mechanized their facilities, striving to combine handcrafted methods with modern machinery to enhance sake production.
