This sake is brewed in Shisō City, Hyogo Prefecture—a region known for its pristine nature and pure water. The brewery is located in Yamazaki, a historic castle town once ruled by the Yamazaki Domain. It is nestled in a mountain basin blessed with abundant spring water and high-quality rice. At an elevation of 150 meters, Yamazaki experiences temperatures 3 to 5°C lower than cities like Osaka and Himeji. These colder winters create ideal conditions for traditional “kan-zukuri” brewing, allowing for slow, low-temperature fermentation. Since the Edo period, the brewery has upheld its traditions, crafting sake with great care, quality ingredients, and the dedication of its brewers. The result is a well-balanced sake with a hint of acidity, a rich aroma, and a clean, refreshing finish.
