The brewery is located in Masuda City in the Iwami region of western Shimane Prefecture. While the area enjoys a relatively mild climate along the Sea of Japan, the crisp morning and evening temperatures during the brewing season, combined with exceptionally clean air, create an ideal environment for sake production. Founded in 1903 (Meiji 36), the brewery named its sake Fusōzuru, inspired by the crane, a symbol of longevity. The name reflects the desire for both drinkers and brewers to share in longevity and for the sake to soar as a representative of Japan. They use pristine underground water from the Takatsu River, recognized as one of Japan’s clearest streams and a renowned habitat for ayu fish, to craft their sake. The brewery focuses on producing junmai sake that blends seamlessly into daily life. Rather than pursuing flashy aromas, the sake emphasizes the natural umami and flavor of the rice. Carefully matured, it is suitable for enjoying in autumn (Akiagari) and when warmed (Kangari), making it an excellent choice for pairing with food. It can be enjoyed chilled, at room temperature, or warmed.
