This historic brewery was founded in 1778 in Oyama, Tsuruoka City, Yamagata Prefecture. Using locally grown sake rice such as Dewa Sansan and Dewa no Sato, polished to 50% or less, and brewed with Yamagata yeast, they produce sake with a rich aroma and full-bodied flavor. With the motto “Always aiming for even better sake,” the brewery continues to refine its craft year after year. Since around 2012, they have focused on unfiltered, undiluted sake (muroka genshu) and have adopted year-round brewing—a rare approach for a small local brewery. As a result, they are able to release fresh, newly pressed sake every month.
