Located beneath a 14-story building in front of JR Gifu Station, this sake brewery produces sake year-round thanks to its underground facility. The stable temperature, consistently around 20°C even in summer, allows for uninterrupted brewing. One of Nihonizumi’s defining features is the ability to enjoy freshly pressed sake throughout the year. The water used, drawn from 100 meters underground, is sourced from the renowned Nagara River groundwater, selected as one of Japan's top 100 water sources by the Ministry of the Environment. With a hardness level of 1.7 to 1.9, this ultra-soft water contributes to the sake’s smooth and refined flavor, playing a crucial role in the brewing process.
