Kijo-shu is a rich and sweet sake made by replacing water with sake during fermentation, resulting in a luxurious, velvety texture. Gozen-shu Kijo-shu takes this concept even further by using Bodaimoto Junmai sake instead of water, creating a rare “Bodaimoto × Bodaimoto” style brew. The result is an elegant balance between the natural acidity of Bodaimoto and a deep, honeyed sweetness with a clean, sharp finish. This sake pairs beautifully with rich dishes such as liver pâté, foie gras, and game meats.
