Wakanoi Sake Brewery, founded in 1890 (Meiji 23), is located in the upper reaches of the Mogami River in Yamagata Prefecture. Surrounded by the Iide and Azuma mountain ranges, the brewery uses high-quality sake rice grown in the region and ultra-soft spring water filtered naturally through granite from the Nogawa River. This combination brings out the rice’s natural aroma and flavor. Their sake is aged in a special snow-cooled storage facility called YUKIMURO, located in Iide Town. Maintained at a constant temperature of 0 to 3°C year-round, the facility uses the natural cooling power of snow. This slow aging process results in a smooth, refined taste with rich depth and character.
