Himonoya Sake Brewery is located in Nihonmatsu City, Fukushima Prefecture, and was founded in 1874. Their flagship brand, Senkonari, takes its name from the “Sennari Hyotan” (a gourd crest) used by Toyotomi Hideyoshi, the feudal lord once served by the ruler of the former Nihonmatsu domain, Lord Niwa. The name was later given the meaning “a thousand achievements will be fulfilled,” reflecting a wish for success and good fortune. The brewery values traditional tools and techniques, crafting sake with great care and attention to detail. They use high-quality spring water from Mount Adatara for brewing, and are dedicated to making local sake that is loved by the community.
