Suto Brewery Company

Suto Brewery Company

Ehime

Located in Saijō City, Ehime Prefecture, Shutō Shuzō is a sake brewery that has been deeply rooted in the local community since its founding in 1901. Uniquely, the brewery does not employ a traditional master brewer (tōji); instead, sake is crafted entirely by three brothers. Their strong bond and seamless teamwork allow them to produce each bottle with exceptional care and precision. Using pristine spring water from the Ishizuchi mountain range, they create sake with a soft and smooth mouthfeel. Rather than pursuing mass production, they focus on brewing each type individually with great attention to detail, staying true to their philosophy of sincerity and craftsmanship. Their flagship label, Sukigokoro, carries the heartfelt wish that it will be enjoyed during celebrations and joyful moments.4o
