Okayama

Established in 1870, our brewery has maintained its traditional appearance since the Edo period. Located alongside the Aboshigawa River where fireflies inhabit, we use its underground water for brewing. We exclusively use rice grown in Okayama Prefecture, including the once-legendary "Omachi rice" and varieties unique to Okayama, such as those cultivated in Okayama and known as "phantom rice." Our brewery, led by a skilled Bitchu toji, a traditional sake master originating from Okayama, meticulously crafts sake using expertise and intuition.
