With a history of over 300 years, this brewery in Higashi Mino uses richly flavored groundwater, carefully sourced over many years, as its brewing water. They select only the finest rice essential for sake making and brew each batch with heartfelt dedication. Using well water from the Shonai River system, their high-quality sake—crafted by a small team—is highly praised. Deeply rooted in the local community, the brewery is currently led by Shosuke Ito, the 13th generation head brewer.
