Surrounded by mountains and rivers, this historic and nature-rich region has been home to our sake brewing tradition for over 320 years. We are committed to crafting exceptional sake by focusing on four key elements: water, rice, brewing, and aging. We use the pure underground water from the majestic Yahagi River, ensuring a clean and smooth foundation for our sake. Our rice is carefully selected, primarily from Aichi Prefecture, but also from the finest varieties across Japan to perfectly match our brewing style. Our brewing process is a fusion of over 300 years of tradition and craftsmanship, combined with modern technology and scientific advancements, allowing us to achieve both authenticity and innovation. To bring out the best flavors, our sake undergoes gentle maturation in refrigerated storage throughout the brewery, enhancing its depth, complexity, and overall character.
