

This sake is a collaborative project among seven anonymous sake brewers selected from Aichi Prefecture. They have come together under the condition of anonymity to brew sake at a single brewery, transcending their brands. For this second phase, they gathered seven different junmai sake from Maruishi Brewery, famous for its "Ni Usagi" brand, and blended them all using a secret formulation. The base water for brewing, sourced from Aichi Prefecture-grown "Yumesansui" rice, was also blended from various sources brought in by each brewer. This premium sake exhibits a depth of sweetness balanced with a subtle acidity. It offers hints of melon flavor and a delicate effervescence.
