Founded in 1865 during the late Edo period, Matsui Shuzo has been crafting sake for five generations. The brewery uses ultra-soft water sourced from a spring just 100 meters behind the brewery, a rarity even in Japan. While the water’s purity and low nutrient content pose challenges during brewing, it results in sake with a pristine character and a slower maturation rate. Guided by the expertise of the head brewer, a Shimo-no Toji master, Matsui Shuzo produces sake that perfectly balances this unique water’s qualities, achieving refined, harmonious brews.
