With Itoshima City, Fukuoka Prefecture, blessed with nature, as our hometown, we continue to learn from the wisdom of our predecessors in sake brewing. Itoshima is a well-known Yamada-Nishiki production area. Yamada-Nishiki is said to be the best sake rice. It was in 1989 that the people of the hometown began brewing sake from Yamadanishiki produced in Itoshima with great care. The sake is brewed with local rice and pressed gently in a traditional wooden pressing method called hanegi shibori. This is the Shiraito Brewery's sake.
