Made with Omachi rice from Okayama, polished to 60%, this is a summer-exclusive sake. Its gentle aroma, reminiscent of muscat grapes and red grapes, spreads pleasantly across the palate, accompanied by a touch of sweetness. Koizumi Brewery was founded in 1793 by Heizo Koizumi at the foot of Mt. Kanozan. Over generations, the brewery grew, with Genzo expanding the business in the Meiji era. In the early Showa period, Ichisuke introduced refrigeration to improve quality and dedicated himself to brewing ginjo sake, a tradition that continues today. Currently, the brewery owner also serves as the toji (master brewer). Using rice grown by themselves and pure water from the Kanozan mountains, they brew sake that honors tradition while embracing innovation. Their signature labels are Tokaizakari and Tokai.
