The town of Shirakawa, where Senkoma is located, is in the southern part of Fukushima Prefecture, a picturesque castle town surrounded by nature with the towering Nasu Mountains to the west. The brewery’s master brewer, Tadashi Kikuchi, is skilled at drawing out the distinct characteristics of rice. He expertly handles sake rice varieties such as "Gohyakumangoku" and "Ginpu." Kikuchi says, "I assess the rice's unique traits and carefully select the right combination of koji and yeast," and the flavor of the sake is influenced by many factors. Kikuchi, like a sake expert, finds the perfect balance among numerous variables to create the best drop. While preserving the cherished flavors loved by the local community, Senkoma also develops new products, including shochu and liqueurs, alongside their sake. The brewing water comes from the Nasu Mountains' underground spring. Rich in potassium and calcium, and free of iron and manganese, it is ideal for fermentation.
